Banana Curry Chicken with Jasmine Rice

Ingredients
2 Tbs vegetable oil
1/2 yellow onion, thinly sliced
1/2 cup white button mushrooms, thinly sliced
1 tsp curry powder
1 tsp turmeric powder
1 (13 oz) can coconut milk
1/2 cup whole milk
2 Tbs sweet chili sauce
2 boneless, skinless chicken breasts, cooked and diced
2 ripe bananas, mashed
1 cup jasmine rice, cooked (for serving)
Directions
- Add the oil to a skillet over high heat.
- Add the onions and mushrooms.
- Sauté for 3 to 4 minutes until soft. Add the curry powder and turmeric. Cook for one more minute.
- Add the coconut milk, whole milk and chile sauce.
- Bring to a simmer. Cook for 2 minutes to thicken.
- Add the cooked chicken. Turn off the heat.
- Add the bananas. Stir to incorporate.
- Serve with the jasmine rice.
